Adapt these simple snacks to fit a gluten-free diet by substituting 2 tbsp. gluten-free flour for the plain flour.
¼ cup honey
1 egg, beaten
2 cups coconut, shredded and sweetened
1 cup chopped walnuts
1 cup chopped dates, coated with 2 tbsp. flour
1. Combine honey, egg, and vanilla in a medium-sized mixing bowl. Beat until well blended.
2. Combine the coconut, chopped walnuts, and chopped dates that have been coated with flour. Add to the honey mixture and stir together.
3. Drop your beehives by tablespoonfuls onto a greased cookie sheet.
4. Bake at 325 for 12 minutes or until edges are golden and crispy.
Yields: About 12 morsels
