Boozy and Sweet: One-Bowl Chocolate Loaf Cake

Here’s a treat from Jackie Dodd, author of The Craft Beer Cookbook and who also blogs at Community Table and The Beeroness. It takes just 10 minutes to prep and makes about 4 servings, so you won’t have tempting leftovers around. This fudgy treat gets an adult boost from the addition of stout beer—but you can replace the beer with cola for a family-friendly version.

Ingredients

1/2 cup unsalted butter, melted
2/3 cup unsweetened cocoa powder
2 cups brown sugar
2 eggs
2/3 cup stout beer (like Guinness)
3 Tbsp vegetable oil
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
Whipped cream

Instructions

  1. Preheat oven to 325°F. Grease and flour a 9 x 5-inch loaf pan.
  2. In a large bowl, stir together butter, cocoa powder and brown sugar. Stir in eggs, beer and oil until well combined. Stir in flour, baking powder and salt until just combined. Pour into prepared pan.
  3. Bake 50 minutes or until top springs back when lightly touched. Let cool completely before removing from pan. Frost with whipped cream. Serves 4
