You can use this super-versatile salsa “on fish, pork and chicken or just eat it on your favorite corn chips,” says Wilson. Even the skeptics among us were converted after tasting.

1 mango,diced
1 Granny Smith apple, peeled, cored and diced
1/2 red bell pepper, diced
1/2 red onion, diced
1 1/2 teaspoons sugar
3 tablespoons chopped cilantro
2 tablespoons chopped jalapeno pepper, seeds and membranes removed
1 teaspoon finely grated lime rind
Juice of 1 lime 3 ounces blue cheese, feta or queso fresco, crumbled

1. Combine mango, apple, red bell pepper and onion in a large bowl. Add sugar, cilantro, jalapeno and lime rind. Mix well. Add lime juice and cheese. Cover and refrigerate until time to serve. Makes 4 cups; serves 8.
