Haystack snacks, made with chow mein noodles, are as timely as ever. First made popular in the 1960s, they’re still quick, easy, tasty and reasonably nutritious, with a dose of peanut butter or almond butter providing good monounsaturated fats and some protein. Here are two versions: one with butterscotch morsels and the other with white chocolate. We sprinkled them with some coarse salt for a sweet-salty combination.
Butterscotch Haystacks
1 (11-ounce) bag butterscotch morsels
1/2 cup peanut butter
2 (5-ounce) cans chow mein noodles
1/4 teaspoon coarse salt
1. Place morsels and peanut butter in microwave-safe bowl. Microwave on medium-high 1 minute. Stir until melted. Stir in chow mein noodles and marshmallows.
2. Cover a baking sheet with wax paper. Drop noodle mixture by spoonfuls onto paper. Sprinkle with coarse salt. Refrigerate until set, about 30 minutes. Makes 60.

White Chocolate Haystacks
12 ounces white chocolate morsels
1/2 cup tahini or almond butter
11 ounces slivered almonds
2 (5-ounce) cans chow mein noodles
1 cup coconut flakes
1/4 teaspoon coarse salt
1. Place morsels and tahini in micro- wave-safe bowl. Microwave on medi- um-high 1 minute. Stir until melted. Stir in almonds, chow mein noodles and coconut.
2. Cover a baking sheet with wax paper. Drop noodle mixture by spoonfuls onto paper. Sprinkle with coarse salt. Refrigerate until set, about 30minutes. Makes 60.
